Modified starch markets – trends and developments

The worldwide market for modified starches is estimated at 8 million tonnes. Modified starches represent some 50% of all starch use in Europe. Worldwide the share of modified starches is just short of 25%. Modified starches therefore are the fastest growing starch market segment in the world.

Modified starches are the winner in the market but they are meeting economic, ecological and legal limitations: When consumers seek high-quality foods, they are looking for short ingredient lists with recognisable, understandable and minimally processed ingredients. “Clean label” is the commonly used term by the food industry.
